‘하드 셀처(Hard Seltzer)’. 이름도 참 생소한 것이 최근 미국을 넘어 한국 맥주 마니아들 사이에서도 입소문을 타고 있다. 맥덕들 사이의 유행이라 하니 뭔가 맥주와 관련이 있는 녀석인 것 같은데, ‘하드’는 뭔 의미이며, ‘셀쳐’는 영어인지 독일어인지 듣도 보도 못한 단어고, 그래서 이게 왜 핫한지는 더더욱 감이 오지 않는 사람이 많을 것이다. 걱정 마시라. 이 글만 읽고 나면 어디 가서 하드 셀처에 대해 모른다는 소리는 듣지 않을 테니.
‘Hard Seltzer.’ It’s a relatively new thing that’s on the mouths of beer geeks in the States and Korea. Knowing beer geeks, it’s probably something related to beer. However, it’s confusing what ‘hard’ or ‘seltzer’ stand for, let alone why it’s so popular. Well, don’t worry any longer. After reading this, you will understand everything about hard seltzers.
하드 셀처의 뜻
What does it mean?
사실 하드 셀처에 대한 설명은 두 줄만으로도 충분하다. ‘하드’는 알코올이 들어있다는 뜻이며, ‘셀처’는 탄산수를 칭하는 말이다. 고로 ‘하드 셀쳐’는 알코올이 들어 있는 탄산수라는 뜻이다. 하지만 그렇다고 이렇게 마무리를 짓긴 아쉬우니 조금 더 깊게 파헤쳐보자.
우선 ‘셀쳐’라는 말은 독일의 유명한 천연 미네랄 워터 브랜드인 ‘셀터스(Selters)’에서 유래된 것이다. 그리고 ‘셀터스’는 독일 ‘헤네(Henne)’의 ‘셀터스(Selters)’란 지역에서 생산된 천연 미네랄 워터다. 이 지역의 광천수는 칼슘, 염화물, 마그네슘, 황산염 및 칼륨 이온 등의 미네랄이 풍부해 772년에도 사용 기록이 존재한다. 광천수는 16세기부터 리조트 사업과 물 판매 사업에 사용되면서 국제적인 명성을 얻기 시작했다. 이후 이 지역의 물은 ‘Selters’, ‘Selterwasser’, ‘Selter’ 등으로도 불리며 미국으로 건너가 ‘셀처(Seltzer)’라고 불리게 된다.
It only takes two lines to explain the hard seltzer. ‘Hard’ means it contains alcohol, and ‘Seltzer’ is carbonated water. ‘Hard seltzer,’ therefore, is carbonated alcoholic water. But that’s not a full explanation, so let’s dive a little deeper.
The word ‘seltzer’ derives from the German trademark Selters, Which in turn derives its name from the town of the same name, in the German region of Henne. The region’s mineral-rich water - full of calcium, chlorides, magnesium, sulfides, and potassium - has been in use since 772 AD. The region’s water gained its international fame in the 16th century when the resort and water industries started marketing it. The water was then labeled Selters, Selterwasser, or Selter, and became Seltzer in the United States.
탄산수가 일상생활에서 자주 만나볼 수 있는 음료임에도 한국 사람들에게 ‘셀처’라는 말이 잘 알려지지 않은 이유는 주로 판매되는 탄산수가 스파클링 미네랄 워터(Sparkling Mineral Water)나 클럽 소다(Club Soda)와 같은 표현을 사용하기 때문이다. 그럼 ‘하드 소다’나 ‘하드 스파클링 워터’라고 하지 대체 왜 ‘하드 셀처’라는 표현을 사용하게 됐을까? 이유는 이들 간에 미묘한 차이가 있기 때문이다. 우선 스파클링 미네랄 워터의 경우는 보통 천연 샘물 등에서 직접 채취하여 생산되며, 덕분에 몇 가지 염이나 황 화합물 같은 천연 미네랄이 풍부하게 포함되어 있다. 그로 인해 물 자체의 맛이 다채롭고 풍부한 편이다. 클럽 소다는 스파클링 미네랄 워터에 비해 미네랄 함량이 떨어지나, 좀 더 나은 맛을 위해 탄산수소칼륨과 황산칼륨이 따로 첨가된 물이다. 바텐더가 칵테일을 만들 때 주로 사용하는 탄산수가 이것이라 보면 된다. 반면 셀처는 그마저도 없다. 미네랄이 그다지 들어있지 않은, 그냥 물과 탄산으로 이루어져 별맛이 없는 탄산수다. 반대로 말하면 아무것도 그려지지 않은, 그림 그리기 편한 하얀 도화지와 같다는 것이다. 근래 만들어지는 ‘알코올이 들어간 탄산수’들은 미네랄 성분에 딱히 연연하지 않고, 갖가지 착향료를 사용한다. 그래서 ‘소다’나 ‘스파클링 워터’보단 ‘셀처’라는 표현을 사용하는 것이다.
Carbonated water is a staple in a Korean household. However, the name Seltzer isn’t because most of the carbonated waters sold in the country are labeled either sparkling water or club soda. Why, then, is the new beverage called a seltzer and not a hard soda or sparkling water? The answer lies in the subtle differences between the three waters. Sparkling mineral water is drawn from a natural spring. It contains various minerals such as sulfur or chlorine compounds that enrich the flavor of the water. Club soda contains fewer minerals compared to mineral water, but have artificially added potassium hydrogen carbonate and potassium sulfate. Club soda is the carbonated water of choice by many bartenders around the world. Seltzers are on the far end, with no added chemicals. It only contains carbonic acid and water, with trace amounts of minerals that give almost no added taste. This, in turn, means that the water is like a white canvass, ready to paint any picture the brewer desires. Carbonated alcoholic waters today have added artificial flavoring with little regard to mineral contents. Hence, the term seltzer is preferred over soda or sparkling water.

여기까지 알고 나면 보통 하드 셀처의 맛에 기대가 커지기 마련이다. ‘얼마나 맛있길래 이렇게 화제가 되고 있는가’하며 말이다. 하지만 하드 셀처를 처음 맛본 사람들의 반응은 대부분이 실망에 가깝다. 맥주 비스름한 무언가를 기대하며 마시지만, 맛이 상상 이상으로 가볍기 때문이다. 앞에서도 언급했듯이 하드 셀처의 본질은 결국 ‘탄산수’다. 알코올이 들어갔다 할지언정 그 느낌은 ‘술’보단 ‘물’에 더 가깝다는 것이다. 고로 하드 셀처의 맛을 좋아할 법한 사람은 기존에 술을 좋아하던 사람이 아니라 되려 탄산수를 좋아하던 사람이다. ‘탄산수를 마셨을 뿐인데 알코올을 덤으로 주네?‘라는 느낌으로 이해하는 쪽이 좋다.
Now one may be wondering what a hard seltzer might taste like, such that it’s receiving so much spotlight. But many who taste it for the first time are left disappointed. They expect beer - or at least beer-like but are met with something much lighter. The nature of the hard seltzer, as explained above, is carbonated water. Even with added alcohol, it is closer to water than alcohol. People who like hard seltzer are, therefore, not beer or wine drinkers, but those who like sparkling water. It’s easier to understand hard seltzer as carbonated water with extra alcohol, rather than a fully alcoholic beverage.
분명히 발효를 거쳐 만든 술인데도 하드 셀처가 물에 더 가까운 인상을 주는 이유는 주재료가 설탕처럼 매우 단순한 당 덩어리기 때문이다. 대부분의 발효주는 효모가 당을 먹고 알코올을 생산하는 것 이외에도 여러 물질을 대사하고, 대사되고 생성된 물질들이 대사되지 않고 남아있는 재료들의 맛과 어우러져 복합적인 풍미를 형성한다. 하지만 설탕처럼 단순한 당만 사용하면 설탕은 모두 알코올로 전환되어버리고 별다른 풍미가 생기거나 남질 않는다. 정말로 물에 알코올만 넣은 것과 크게 다를 바가 없는 것이다. 그래서 하드 셀처를 만들 땐 약간의 미네랄과 굉장히 다양한 향료를 첨가하여 심심한 빈자리를 채워주기도 한다. 탄산수에 레몬 향을 첨가하듯이 말이다.
가볍고 캐주얼한 음료로 인식되다 보니 하드 셀처를 알코올 도수가 굉장히 낮고 가벼운 음료라고 오해하는 경우도 있는데, 전혀 그렇지 않다. 하드 셀처의 도수는 대부분 맥주와 비슷하게 4~7%에 이르며 10%가 넘는 것도 존재한다. 극한의 음용성을 지녔다 보니 오히려 어지간한 맥주보다 훨씬 쉽고 빠르게 취할 수 있다. 어쩌면 이러한 점 때문에 하드 셀처를 좋아하는 사람도 분명 있을 것이다.
Hard seltzer gives its water-like impression because its main ingredient is a simple sugar. Most fermented beverages chemical compounds metabolized by the yeast, which gives their complex flavor and aroma. If only simple sugars - such as table sugar - are used, they are all converted to alcohol, without leaving any other flavor. It would be no different from adding alcohol to water. Some brewers add minerals and artificial flavors to fill the blank spaces, like adding citrus flavors to sparkling water.
Many consider hard seltzers to be light and casual, and that they have very low alcohol by volume, but that’s not always the case. Most hard seltzers have similar ABV as beers at 4-7%, with some going over 10%. With almost extreme drinkability, it will get you drunk much faster than a beer can - a factor that may appeal to more conventional drinkers

사실 하드 셀쳐가 최근에 탄생한 음료는 아니다. 미국의 유명 대기업 맥주 회사 중 하나인 쿠어스(Coors)가 1993년 지마(Zima)라는 낮은 도수의 하드 셀쳐를 출시한 적이 있다. 하지만 당시에는 술 같지도 않은 술이라는 이유로 비웃음만 샀을 뿐이었다. 결국 지마는 큰 성과를 거두지 못한 채 2008년에 단종되었다(2017년에 아주 잠시 재출시되긴 했었다).
Hard seltzers are not new inventions. In 1993, American beer manufacturer Coors released a low alcohol version called the Zima. But it was mocked and ridiculed for not being ‘alcoholic’ enough. With no success, the Zima was discontinued in 2008 (It was briefly reintroduced in 2017).
본격적으로 하드 셀쳐가 관심을 받기 시작한 것은 2013년부터였다. 당시 보스턴의 한 남자는 아내가 탄산수를 굉장히 사랑하는 것에 영감을 얻어 알코올이 들어 있는 탄산수를 집에서 개발해낸다. ‘SpikedSeltzer’라 명명한 이 하드 셀처는 처음 시중에 유통되었을 때 ‘셀처’라는 이름으로 인해 소매업자가 큰 혼동을 겪는 해프닝이 있긴 했지만, 어찌 됐건 2015년 한 해에만 25만 박스 이상을 판매하며 소기의 성과를 거두었다. 그리고 2016년, SpikedSeltzer는 안호이저-부시(Anheuser-Busch)에 인수된다. 현재 SpikedSeltzer는 Bon & Viv란 이름으로 리브랜딩 되어 생산되고 있다.
Hard seltzer began to receive the spotlight in 2013 when a Bostonian developed alcoholic carbonated water inspired by his wife’s love for club soda. Named the ‘SpikedSeltzer,’ it first met with the confusion of distributors over the name seltzer. However, it was able to sell over 250 thousand boxes in 2015 alone. The company was acquired by the Anheuser-Busch in 2016 and is now sold under the name Bon & Viv.
이때 이미 미국 맥주 시장의 분위기는 더욱더 가벼운 것을 추구하는 방향으로 가고 있었다. 더 마시기 편하고, 더 칼로리가 낮아 더 건강한(결국 술임을 고려하면 다소 얼토당토않지만) 맥주가 대세가 되어감에 따라 라이트 라거(Light Lager)가 득세하던 와중이었다. 이때 등장한 하드 셀처는 라이트 라거가 극한으로 치달았을 때의 그것과도 같은 인상이었다. 알코올을 제외한다면 0에 수렴하는 매우 낮은 칼로리에, 질척이는 단맛도 없어 극한의 음용성도 갖췄고 알코올이 들어있다는, 그동안 시장에 없던 이 음료는 ‘건강하지만 시원하고 취할 수 있는’ 음료를 찾던 이들에게 큰 주목을 받는다. 실제로 하드 셀처에 대한 선전 문구로 ‘죄책감 없는(Guilt-free)’, ‘웰빙(Wellness)’ 등을 사용한 것을 보면 하드 셀처가 소비자에게 어떤 이미지인지 알 수 있다. 이 외에도 가격이 매우 싸다는 점, 대부분이 캔 제품이라 어느 때고 마시기 편리하다는 점, 알코올 도수가 낮아서 식료품점이나 편의점 등에서도 쉽게 구할 수 있다는 점(주마다 다르긴 하지만 보통 미국은 도수 높은 술은 식료품점 등에서 쉽게 팔기 어렵다), 얼핏 봐선 일반 탄산수처럼 보이기에 공공장소에서 마시기에도 부담스럽지 않다는 소소한 장점 등이 하드 셀처의 인기에 힘을 실었다. 한국에선 딱히 중요한 요인이 아니지만, 곡물에서 기인한 글루텐이 없다는 점도 서양권 사람들에겐 굉장한 메리트다. 유전적으로 글루텐을 대사하는 능력이 떨어지는 사람이 많기 때문이다.
At this point, the American beer industry was already heading towards lighter beers that are healthier, more drinkable, with lower calories - for whatever that’s worth - such as light lagers. Hard seltzer gave the impression of light lagers gone extreme. With almost no calories or cloying sweetness, the hard seltzer found a new market for people who sought drinks that were ‘healthy but boozy.’ Slogans such as ‘guilt-free’ and ‘wellness’ used to promote hard seltzers also show what kind of image they give to the consumers. Other advantages such as low price, canning, easy access due to low ABV (though vary by state, high-proof alcoholic beverages are very difficult to sell in grocery stores), and no social stigma also contributed to the hard seltzer’s growing popularity. Also, while not particularly important in Korea, the fact that hard seltzer is gluten-free is significant merit in the western world, as a majority of Caucasians cannot metabolize gluten.
현재 하드 셀처는 가장 유명한 White Claw부터 Bon & Viv, Truly, Henry, Nauti, Bud Light Seltzer, Wild Basin, Press에 이르기까지 굉장히 다양한 브랜드가 존재할 정도로 대세 반열에 오른 음료가 됐다. 2018년까지만 해도 2억 1천만 달러 규모였던 미국의 하드 셀처 시장은 2019년엔 1년 만에 12억 달러로 급성장했다. 전문가들은 2021년까지 미국의 하드 셀처 시장의 규모가 25억 달러에 이를 것으로 예상하며, 향후 5년간 미국에서 가장 빠르게 시장 규모가 성장하는 음료가 될 것이라 한다. 반대로 와인, 맥주와 같은 발효주의 시장규모는 점차 하락하고 있다고 한다.
Now, hard seltzer has taken its place as one of the trendiest beverages in the world, with famous brands such as the White Claw, Bon 7 Viv, Truly, Henry, Nauti, Bud Light seltzer, Wild Basin, and Press. The industry also grew from 210 million dollars in 2018 to 1.2 billion USD in 2019. Experts estimate that the industry will grow to 2.5 billion USD by 2021 and that it will be the fastest-growing beverage for the next five years. Other fermented beverages such as wine and beer, sadly, are in decline.
최근 오스카 블루스(Oskar Blues)가 생산한 ‘Wild Basin’이 해외 하드 셀처 중 최초로 한국에 수입됐다. 미국에서 그야말로 ‘광풍’을 일으킨 하드 셀처는 과연 한국 시장에선 어떠한 변화를 보여줄까. 미국의 이름있는 크래프트 브루어리들도 하드 셀처를 생산하기 시작한 지금, 한국 브루어리들은 어떠한 반응을 보일까. 하드 셀처가 보여줄 새로운 미래가 기대된다.
Recently, Oscar Blues’ Wild Basin became the first hard seltzer to enter the Korean market. Will the hard seltzer have the same impact as it did in America? Will Korean breweries start making hard seltzers like their American counterparts? We can all look forward to a new future for hard seltzer.
